Udon Noodle Stir Fry

This recipe is a quick, crowd-pleasing meal to cook on the Blackstone at the campsite. Udon Noodle Stir Fry is a great one to keep in your rotation. It’s savory, a little tangy, a little spicy, and packed with vegetables and noodles that soak up all that delicious sauce.


Udon noodle stir fry with ground beef, broccoli, onions, and red bell peppers cooked on a Blackstone griddle, tossed in a savory soy and sriracha sauce.

This is one of those meals that looks fancy but is actually super simple. Everything cooks quickly on the griddle, which makes it perfect for camping when you don’t want to spend all evening cooking. Plus, it feeds a group easily, which is always a win when you’ve got hungry campers hanging around your site.


I originally saw a version of this made with ramen noodles, but I used udon noodles instead because I wanted to try something different. They hold the sauce really well and make the whole dish feel a little heartier. Full transparency though: I'd stick to the ramen noodles next time.


Whether you're cooking at the campground or in your backyard, this stir fry is an easy meal that comes together fast and tastes like something you'd order at a restaurant.

Ingredients


  • 1 tbsp vegetable oil (such as canola)

  • 1 large onion, chopped

  • 1 red bell pepper, chopped

  • 1 head broccoli, cut into florets

  • 1 lb ground beef, chicken or turkey

  • 1 pack udon noodles

  • Salt and pepper, to taste


Sauce

  • ¼ cup soy sauce

  • 1 tbsp brown sugar

  • 1 tbsp apple cider vinegar

  • 2 tsp sriracha

  • 1 clove garlic, minced


Optional

  • Extra sriracha for serving

  • 1 scallion, chopped


How to Make Udon Noodle Stir Fry


1. Cook the vegetables

Heat the oil on your Blackstone or large skillet over medium-high heat. Add the onion, bell pepper, and broccoli. Cook for several minutes until the vegetables start to soften.


2. Brown the beef

Push the vegetables to the side and add the ground meat. Break it up with your spatula and cook until browned. Season lightly with salt and pepper.


3. Prepare the noodles

Cook the udon noodles according to the package instructions. Drain and set aside.


4. Make the sauce

In a small bowl, mix together the soy sauce, brown sugar, apple cider vinegar, sriracha, and minced garlic.


5. Combine everything

Add the cooked noodles to the griddle with the beef and vegetables. Pour the sauce over everything and toss until the noodles are coated and heated through.


6. Serve

Top with chopped scallions if you'd like and drizzle with extra sriracha for more heat.


Tips for Cooking This on the Blackstone

  • Cook the vegetables first so they stay slightly crisp.

  • Use two spatulas to toss the noodles easily.

  • If the noodles start sticking, add a small splash of oil or soy sauce.
