This is one of those recipes that looks impressive but is actually really easy to make, which makes it perfect for cooking at the campsite. The ground chicken cooks quickly on the griddle, the tortillas get perfectly golden, and the fresh pizza salad mix on top gives it a little crunch.

Ingredients

  • 1 lb ground chicken

  • Italian seasoning

  • Grated parmesan cheese

  • Cooking oil (such as canola or vegetable oil)

  • Street taco size tortillas

  • Mozzarella cheese slices


Pizza Salad Topping

How to Make Pizza Smashburger Tacos

1. Prepare the salad mix

In a bowl, mix together the pizza ranch salad kit according to the package directions. Add chopped pepperoni and toss to combine. Set aside.


2. Season the chicken

In a bowl, mix the ground chicken with Italian seasoning and grated parmesan cheese.


3. Form the smash burger balls

Roll the seasoned ground chicken into small balls that will fit the size of your tortillas.


4. Start cooking on the griddle

Heat your Blackstone or flat top griddle to medium-high and add a little oil.

Place the chicken balls onto the griddle and sprinkle a little more Italian seasoning on top. Smash them flat with your burger press (I especially love THIS ONE).


5. Add cheese and tortillas

Top each smashed chicken patty with a slice of mozzarella cheese and place a street taco tortilla on top.


6. Flip and toast

Flip the tacos so the tortilla side is on the griddle. Let the tortillas cook until they are golden and slightly crispy.


7. Assemble the tacos

Place the tacos into taco holders and top them with the pizza salad mix. Finish with a sprinkle of grated parmesan cheese.


Tips for Cooking This on the Blackstone

  • Smash the chicken thin so it cooks quickly.

  • Let the tortilla cook long enough to get slightly crispy.
