Chicken Parmesan Smash Toast takes all those flavors we love about chicken parmesan and turns them into an easy, crispy griddle meal. Seasoned ground chicken gets coated in Italian panko breadcrumbs, smashed right on the griddle until golden and crispy, and then piled onto buttery garlic Texas toast with marinara and plenty of melty mozzarella.
This is exactly the kind of griddle recipe I love. It uses simple ingredients, doesn’t require a ton of prep, and feels a little more fun than your everyday dinner. And while I made this one at home, it would be an easy meal to make at the campsite on your outdoor griddle, too.

It’s family-friendly, uses ingredients you can easily grab at the grocery store, and everything cooks right on the griddle. Plus, smashing the breaded ground chicken gives you lots of those crispy, golden edges before you add the marinara and melted cheese.
And then there’s the garlic Texas toast. Enough said.
Ingredients
For the Chicken Parm Smash Patties
1 lb ground chicken
1/4 cup grated Parmesan cheese
Italian seasoning, to taste
Garlic powder, to taste
Crushed red pepper flakes, to taste
Italian seasoned panko breadcrumbs, enough for coating
Oil, for the griddle
For the Toast
10 pieces frozen garlic Texas toast
Marinara sauce
Shredded mozzarella cheese
Italian seasoning
Grated Parmesan cheese
Instructions
Make the chicken mixture.
Add the ground chicken to a bowl along with about 1/4 cup grated Parmesan cheese. Season with Italian seasoning, garlic powder, and crushed red pepper flakes. Mix until everything is combined.
Form and bread the chicken.
Divide the chicken mixture into 10 balls. Roll each ball in Italian seasoned panko breadcrumbs until coated on all sides.
Start cooking the chicken.
Preheat your griddle to medium-high heat and add a small amount of oil. Place the breaded chicken balls onto the griddle and let them cook for about a minute, or until the bottoms begin to turn golden.
Flip and smash.
Flip each chicken ball over, then use a burger press or smashing tool to flatten it into a thin patty. Allow the chicken to cook until golden and crispy, then flip and finish cooking the other side. Make sure the ground chicken reaches an internal temperature of 165°F.
Move the chicken off the heat.
Once the chicken patties are cooked through, move them to one side of the griddle and turn off the burner underneath them.
Toast the garlic bread.
Place the frozen garlic Texas toast on the other side of the griddle. Cook until golden and toasted on both sides.
Assemble the Chicken Parm Smash Toast.
Turn the griddle heat down to low. Add a small amount of mozzarella to each piece of Texas toast. This gives you a nice cheesy layer to help hold the chicken in place. Place one Chicken Parm Smash Patty on each piece of toast.
Add the toppings.
Spoon marinara sauce over each chicken patty and top with more shredded mozzarella.
Melt the cheese.
Squirt a small amount of water directly onto the griddle, keeping it away from the Texas toast so the bread doesn’t get soggy. Close the griddle lid or cover the Chicken Parm Smash Toast with a melting dome and let the steam melt the mozzarella.
Finish and serve.
Sprinkle the tops with Italian seasoning and grated Parmesan cheese. Serve hot and enjoy!
