Ingredients

  • 1 ½ lbs red potatoes, cut into chunks

  • 1 lb smoked sausage, sliced

  • 1 large red onion, cut into chunks

  • 4 ears corn, halved

  • 1 lb large raw shrimp, peeled and deveined

  • Old Bay seasoning (be generous!)

  • 1 bottle of beer (lager works great)

  • Heavy-duty foil pan

  • Foil for covering

Instructions

  1. Prep the base

Add the cut potatoes, sliced smoked sausage, and red onion into a large foil pan. Sprinkle generously with Old Bay seasoning and mix everything well.

  2. Layer the corn

Place halved corn cobs on top of the potato mixture and sprinkle on more Old Bay for extra flavor.

  3. Add the liquid

Pour a full bottle of beer into the pan. Cover tightly with foil.

  4. Cook over the campfire

Set the foil pan on a grate over the campfire coals. Cook for 30–40 minutes, until the potatoes are starting to soften.

  5. Add the shrimp

Season the shrimp with Old Bay. Once the potatoes are nearly tender, place the shrimp on top, cover again, and cook for another 5–7 minutes, until the shrimp are pink and cooked through.

  6. Serve & enjoy

Remove from the fire, carefully open the foil (watch out for steam!), and dig in. Serve straight from the pan for that classic camping experience.

Camping & RV Tips

  • If you’re camping with friends, this makes a great potluck-style dish for gathering with neighbors.

  • Want to keep things extra easy? Pre-chop the veggies and sausage at home before heading to the campground.

  • Don’t drink beer? You can substitute chicken broth, but beer gives it that authentic shrimp boil flavor.

  • For a quick and easy side, whip up some cornbread muffins in your RV oven, or cornbread pancakes on your Blackstone.
