Ingredients

  • 4 Asiago cheddar bagels (or your favorite bagels)

  • 8 oz cream cheese

  • 2 fresh jalapeños, diced

  • 2 green onions, diced

  • ½ tsp smoked paprika

  • 1 Tbsp ranch seasoning

  • 6 oz Cooked bacon, crumbled

  • 6 oz Cooked breakfast sausage, crumbled

  • 4 eggs

  • 1/2 C Shredded cheddar or cheese blend (for topping)

  • Extra jalapeño slices (for topping)


Instructions

  1. Cook the bacon and sausage on your Blackstone. Crumble bacon and set aside.

  2. Slice the tops off the bagels, cut a circle around the inside of bagel and gently press down the insides, creating a little “bagel bowl” for your filling.

  3. Mix cream cheese, diced jalapeños, green onions, smoked paprika, ranch seasoning, bacon, and sausage into a deliciously spicy filling.

  4. Spoon the filling into each bagel, packing it in so it’s nice and full.

  5. Crack the eggs on the griddle and cook over easy.

  6. Toast tops and bottoms of bagel on the griddle.

  7. Lay 3 sliced jalapeños in 4 groups on griddle and top with 1-2 tablespoons of shredded cheese. Let melt and get slightly crispy and flip onto the egg. Place cheese covered egg on top of bagel.

  8. Sprinkle with green onion.
