4 tablespoons butter
1/4 cup all-purpose flour
1 cup whole milk
1/2 cup beer
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon smoked paprika
1/2 teaspoon kosher salt
1 3/4 cups freshly grated sharp cheddar cheese
1/2 cup freshly grated smoked gouda cheese
Instructions
Heat a medium saucepan over medium heat and add the butter. Allow it to melt completely.
Once the butter is melted, whisk in the flour to create a roux. Continue whisking until the mixture is smooth and lightly bubbly.
Slowly pour in the milk while whisking constantly. Keep whisking until the mixture is smooth and begins to thicken slightly.
Reduce the heat to low and add the beer. Whisk until fully combined and smooth.
Stir in the Worcestershire sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, and salt. Whisk until everything is well incorporated.
Add the shredded cheddar cheese and whisk until melted and smooth.
Add the smoked gouda and continue whisking until the dip is creamy and fully combined.
Remove from the heat and let the dip cool slightly. It will thicken as it rests but should still be served warm.
